The Great Game
Game and poultry were from the beginning of time always an important part of man's diet, even before the intensive farming methods were introduced.
Game is a natural food, free from all the bad elements identified in today’s discussions; additives, hormones, preserves, water, etc. the very fact that wild animals have to hunt for their own food means that they have very little fat themselves and are therefore very healthy to eat themselves.
The game season is upon us here in the highlands and we have already taken delivery of venison from our local Coulin Estate, with our first Red and Sika deer.
Our local gamekeepers work very hard to produce excellent quality meat. Blood sports have always had their bad press but if hunting is done in a controlled and professional manner then it helps maintain the environmental balance for years to come.
I will always preach these words........Buy fresh never frozen, go for quality not price and seek out those who care about giving you the best available. Neil Morrison, Head gamekeeper of Coulin Estate is one of those people who gives us the best
